A good friend recently gave birth so when some friends and I visited her last week in the hospital, I thought of cooking her something which is simple yet nourishing at the same time. Remembered I still have some bottles of essence of chicken at home so a quick trip to the market in the morning to get some fresh chicken thighs to go along with some chinese herbs and dry ingredients I already have at home for a fix of 鸡精蒸滑鸡腿 Steamed Chicken Thighs with Essence of Chicken.
Comfort food is often what one truely yearns for when one gets home after a long day, It could be after laborious ploughing through streams of data and figures, in an almost hypnotic trance-like fashion in front of the computer hours at ends, and dinners made frugal. Or it can be after endless evenings of socialising, over martinis and cocktails amidst cosmetic conversations and superficial banter, and real food made little. When one finally gets home, and all that pomp and makeup shed off like a second skin, one can finally be oneself. That is when the cravings set in. It can be as simple as a classic Croque Monsieur with freshly toasted bread over old cheese and good ham, or a bowl of cereal with creamy full fat milk and crunchy homemade granola. Satisfying the insatiable, as one becomes overwhelmed by routine and the mundane, comfort food despite its simplicity, transcends and becomes a luxury.
For me, nothing can be more comforting than a bowl of freshly cooked noodles. Those who know my blog well would know that I feature noodle recipes to a great extent and often to great detail as well. From 炸酱面 to Mentaiko Pasta, from Spaghetti alla Bolognese quite long ago to Spaghetti alla Laksa Pesto most recently… in short, I’m a sucker for noodles in all forms, and quite literally so. For me, the sheer act of slurping strands of noodles, be it ramen, pasta, beehoon or kway teow is profoundly therapeutic. Slurping unleashes an avalanche of flavours into the mouth, setting forth a plenitude of palate profiles and aromas that stimulate one’s senses all at once. Slurping is considered part of good table etiquette in the Asian context, and most rightfully so. Surely it is one of the most resounding ways, and the least one can do as a display of appreciation for a good noodle experience.
Babi Ayam Pongteh is very old-school cooking from the Peranakan home. It usually manifests as the pork, or the chicken version and never quite the both of them together. But then, their flavours compliment each other very well. If pork bones and an old hen are the quintessential ingredients to good stock making in Chinese cuisine, I don’t see why it cannot be extended to this dish as well!
Haven’t had Teochew-styled steamed fish in quite a while. This used to be such a common and popular fare on our dining table, but since my mum passed on and my sister moved out after she got married, this dish stopped appearing for quite a while. Just two weeks back I saw my friend Hock Chai from Zi Zai Restaurant in Penang featuring this dish on his facebook and sent me craving to have a taste of it again.
In the past when my maternal grandma was still around, there were some dishes that made rather frequent appearances on the dinner table during family gatherings and Chinese New Year meals. Ngoh Hiang (Chinese five-spice pork and prawn rolls) is an absolute must, and preparation usually started days before, given the number of dishes she has to whip up on the event itself. My grandma modified the conventional style of making ngoh hiang and made them rather petite, each about 2 inches in length, almost bitesize to be gobbled up in quick sucessions. I remember how my cousins and I would sneak into the kitchen as the unmistakable aroma of ngoh hiang frying permeated the house, to grab a piece or two when they were freshly out of the oil wok, even if it meant to risk scalding our tongue and palate, and a probable spanking and tongue lashing from our mothers who were helping out with the feast, for being “ill-mannered” as our misbehaviour were referenced with beggars’!
Then there was always a gigantic pot of kari ayam, quintessential to all meals at my grandma’s. It was very very lemak, just the way I love it, and full of kentang which were two of my cousins’ favorites! Together with it was a large rice-cooker which was never empty, an assuring sign that there is always food in the house no matter what time whomever visited. Finally of course, there is an equally large pot of chap chye, cooked the day before to allow the flavours to fully develop overnight. There would be other dishes on the table of course, like Udang Masak Kicap, Tau Yew Bak (braised pork belly in rich soya sauce), or Hee Peow Tng (fish maw soup) on the stove but the trinity of Ngoh Hiang, Kari Ayam and Chap Chye was always there with their unfailing presence. Though the spread was simple, it was the very essence of traditional home-style cooking which kept everyone well fueled and watered, which in turn kept my grandma happy, knowing that her dishes are thoroughly enjoyed by her children and grandchildren!
