華姐清湯腩 Sister Wah Beef Brisket @ Hong Kong

For folks who are familiar with beef noodles in Hong Kong, 華姐 and 九記 should immediately come to mind. Unlike their Taiwanese counterparts whose recipes originated from largely Szechuan and Zhejiang cuisine to become what is uniquely “Taiwanese Beef Noodles” as we know today, Beef Brisket Noodles in Hong Kong can be traced back to its ancestry in traditional Cantonese cuisine. Flavours wise, the two varieties couldn’t be more different. While Taiwanese Beef Noodles swear to be rich and robust in flavours through the liberal use of spices and condiments, the Cantonese rendition opts to occupy the other end of the spectrum where simplicity and clarity are the key notes highly played. But as most foodies would know, the simpler the dish may seem, the harder it is to get it right but I think 華姐清湯腩 Sister Wah Beef Brisket definitely nailed it. (more…)


金寶清燉牛腩干撈麺 Kampar Beef Brisket Noodles

I made this based on the recipe provided on my dear friend Wendyinkk’s “copycat version” of the famous “Kedai Mee Onn Kee Beef Brisket Noodles  安記牛腩粉麺” from the equally if not more famous “36 Stalls”, the oldest food centre in Kampar Town, Perak. Silly me unintentionally “bastardised” it by being overtly zealous with the ingredients. Apart from the standard beef brisket, I’d added tripe and my favorite beef tendon as well. It was only after I’d made the dish when I went online to search for more photos and description of the original version and to my greatest “horror”, the real McCoy actually looked remarkably simpler and impoverish in looks. So is my version like the actual Onn Kee Beef Brisket Noodles, well I really don’t have an answer to that. But one thing I do know is that it taste quite delicious. 🙂
