一个人的午餐 – Salmon, Shrimp and Dill Pasta
Yet another rainy day… a macaron failure day. With eggs separated, some macaron action was in planning but had to be shelved. Previous experience tells me that macaron shells are more prone to failure on rainy days. Excess humidity in the air hinders the drying of the mac shells which would invariably cause them to erupt into small biscuit volcanoes during baking. Of course one can always dry the shells in an aircon room or in the oven itself, but me aint taking chances. Turned to making pasta instead, for a simple 一个人的午餐 on a rainy friday afternoon.
A handful of dry pasta (type and portion size can vary on individual basis)
pinch of salt
small salmon fillet, preferably salmon belly
3-5 shrimp, shelled and deveined
2 cloves of garlic, paper membrane removed and sliced thinnly
a sprig of dill chopped finely
2 tbsp of heavy/double cream
2 tbsp olive oil
salt and pepper to taste
Freshly grated parmesan (optional)
Bring a pot of water to a boil and add a tsp of salt. Drop in pasta and cook under al dente.
Before straining pasta, scoop a small cup of pasta cooking water and set aside.
Strain pasta with sieve or colander and set aside.
Add olive oil into saucepan and sauté garlic slices briefly.
Add shrimp and salmon and toss around, followed by double/heavy cream.
Add pasta, chopped dill and give a quick toss.
Adjust consistency with pasta cooking water
Adjust taste with pepper and salt.
Grate parmesan block directly over pasta when serving.
Nothing fanciful, nothing difficult. Just a simple lunch. Even the béchamel sauce used is a simplified makeshift version combining heavy cream and the remnants of starch from the pasta cooking water. But it worked quite well 🙂
For a more flavourful version, cut back olive oil by one tbsp and add a knob of butter together with the remaining tbsp of olive oil. Be careful with the salt at the end as the pasta cooking water was salted.
Quite satisfying… macarons would have to be another day 🙂
